Start out with a pizza dough of your choice! We use a whole wheat one, there are many gluten free options. It can be pre-cooked or uncooked. If uncooked roll out the dough and place on a cookie sheet. re
Next, the toppings! This is the fun part!
Cover the pizza with a yummy pasta sauce (preferably low-sugar, low oil)
Start adding the veggies, my favorites are...
Red bell pepper
Artichokes (frozen ones work nicely, best if chopped smaller)
Finely chopped broccoli
Zucchini squash (YUM)
I recently tried beets (pre-cooked them so they weren’t crunchy)
Even olives or sun dried tomatoes
Add all your favorites and make it fun!!
Okay, so next I wrote out the recipe on how to make the creamy white sauce for the top of the pizza, but you are basically just sauteing an onion, adding it to a blender with some cashews, soy milk, and spices and tasting it to make sure you like it!!
•1 medium white onion, chopped (make sure to measure out 1½ cups of chopped onion)
•1½-2 cups low sodium vegetable broth
•1/2 teaspoon fine sea salt
•1/4 teaspoon ground black pepper
•3-4 large garlic cloves, minced
•1/4 to 1/2 cup raw whole cashews (depending on desired creaminess)
Optional: 1 tsp curry (makes it sweet) or garam masala, really whatever spices are your favorite
Add the onion and 1 cup only of the broth to a large pan over medium-low heat. Cook for about 8-10 minutes until the onion is very tender. (Add a tiny bit more broth if it is cooking too fast or turn the heat down, so the onions don't burn.) You could also just use a little oil, but I don’t like to use oil unless its an absolute necessity.
Turn off heat, place the cooked onion in the blender. Add garlic, cashews, salt, pepper, and any other seasonings you like. (curry or garam masala are amazing!) A little lemon juice is yummy too!
I put about 1/2 cup or so of soy milk depending on how thin or thick you want the sauce. Vegetable broth would work just fine if you don’t like soy.
Blend on high for a couple of minutes until very creamy and smooth. Add any more soy milk or broth to reach desired consistency. Taste and add any more salt & pepper/ seasonings, if desired.
Pour the white sauce evenly over the top of the pizza
Place in the oven (375 degrees) until crust is cooked all the way through and there is a nice golden tone to the top!
